Ingredients
2 ripe bananas (mashed) 🍌
1 cup grated carrot 🥕 (about 2 medium carrots)
2 whole eggs
¼ cup olive oil or coconut oil (melted)
¼ cup honey or maple syrup 🍯
1 tsp vanilla extract
1 ½ cups oat flour (or whole wheat flour)
1 tsp baking soda
½ tsp cinnamon
Pinch of nutmeg (optional)
Pinch of salt
¼ cup chopped walnuts or pecans (optional, for crunch)

Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
In a bowl, mash bananas and whisk with eggs, oil, honey, and vanilla.
Add grated carrot and mix well.
In another bowl, combine oat flour, baking soda, cinnamon, nutmeg, and salt.
Mix wet and dry ingredients until just combined (don’t overmix).
Fold in nuts if using.
Pour batter into the loaf pan and bake for 40–50 minutes, or until a toothpick comes out clean.
Let cool 10–15 minutes before slicing.
