Ingredients

2 servings (6 Pancakes):

  • 2 ripe bananas (mashed)

  • 2 whole eggs + 2 egg whites 🥚

  • 1 cup rolled oats (blended into flour)

  • ½ cup Greek yogurt (adds protein & fluffiness)

  • 1 scoop vanilla protein powder (optional, for extra protein)

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt

  • ½ cup fresh blueberries (for topping)

  • 1–2 tsp raw honey (to drizzle on top)

Preparation

Preparation:

  1. Blend oats into flour.

  2. In a bowl, mash bananas and whisk with eggs, egg whites, yogurt, and vanilla.

  3. Add oat flour, protein powder, baking powder, cinnamon, and salt. Mix until smooth.

  4. Heat a non-stick pan and cook pancakes 2–3 minutes each side until golden.

  5. Serve stacked with fresh blueberries and drizzle lightly with honey.
